 Post subject: Good to the Grain -- Baking with Whole Grain Flours

I just thought I'd ask if anyone else has this book and has been baking from it. It won the PIG contest over at Food 52 and is the only cookbook I've actually bought in over a year. Uses a lot of fun flours (quinoa, kamut, splet, amaranth, etc.) and the food so far has really tasted good -- I made an olive cake with rosemary, chocolate, and spelt flour -- and her 100% whole wheat chocolate chip cookie are really good (I should note that these aren't 100% whole grain recipes, though, in large part). The only failing is that the recipes aren't terribly well edited (why any serious baking book written in the 21st century wouldn't have weight measurements along with volume measurements totally fails me), but for a former pastry chef from Spago and Campanile she writes excellent recipes that can be created in a normal home.

And if nothing else, it gave me an excuse to order a whole bunch of stuff from King Arthur's—their boxes still make me so excited—and provided the only high spot of the last two weeks, when we've had three major snow storms.

We have a marvelous library system here in Colorado (I can basically request just about any book from any library) and requested a copy of this. I've got a close friend with celiac disease, so it will be nice to see what I can bake for her. Thanks Lindsay.

I made the 100% whole wheat choc chip cookies and they were outstanding! It's hard to tell that they are made with whole wheat at all. I haven't tried any of the other recipes, but will soon.

I made the gingersnaps yesterday -- they are really to die for, especially when it's 0 degrees. In fact they may replace CI's molasses cookies which have always been my favorite.

I have this book, but unfortunately haven't baked from it. It's still sitting on my nightstand. I need to remember to bring it down to the kitchen and give some new recipes a try!

Those look so good, Lindsay! And if you say they are better than CI's molasses cookies (one of my all time favorite CI recipes), I will definitely have to give them a try as well.

By the way, I do not have a copy of the book, but I have cooked a couple of the recipes that I found on blogs. The WW chocolate chip cookies, may very well beat out the NYT's as my favorite CCC! Crazy I know. They are so good!

Dang it Lindsay,
I've been trying to refrain from cookbooks. Gingersnaps, hmm...better than CI molasses cookies(love those). Now, I am forced to purchase this book, and buy some goodies from KA. Lordy. Heh, I'll tell Rod it was all your doing. :mrgreen: On the bright side, I doubt he'll notice, I have a healthy collection.

Those really are some good lookin cookies!
