I'd go by weight. A lot of cream cheese in tubs here is either softened or whipped. As long as it is neither of these you'll be OK.

It is softened, I think. Or whipped I have always just gone by weight before. I just wondered what the difference would be. Thanks.

Well, looking good until it cracked down to China. Which is why I will never make a cheesecake without a topping.

That is one thing I love about Dorie's. It never cracks or even really browns.

Was it cooked in a water bath? I've never had one cooked that way that cracked.

No, it wasn't. It was excellent though and there were more than enough raspberries to fill in the crack.

Sorry, Mary. I've made that cheesecake more times than I can count and it's never cracked.
