What a fun idea. There was a period of time where I entered contests on a fairly regular basis before life got so busy. I've won a lot of cookbooks that way :)

Actually, I played around with a really simple bread salad recipe this weekend for the contest and it came out really well, (contest is limited to 8 ingredients, not including the English Muffins and salt and pepper):

Here's an abbreviation:

For 4 people:

For Salad:
1 pound asparagus
1/4 cup olive oil
1/4 pound feta cheese, crumbled
2 shallots
4 English muffins
Salt and Pepper

Lemon-Thyme Vinaigrette
3/4 cup olive oil
4 T lemon juice (I think)
2 tsp. mustard
3 tsp. minced thyme
salt and pepper

Roast asparagus with olive oil. Let cool and cut into 3/4 inch pieces. Toast English Muffins and cut into 3/4 inch pieces. Dice shallots. Combine everything in bowl.

Make vinaigrette with olive oil, lemon juice, mustard, thyme, salt and pepper. Add to taste.

I would add roasted beets &/or oranges to the mix, but maybe that will be over your 8 ingredients. I thought I all ready sent this, so if you get two posts, sorry.

I like the idea of using toasted english muffins in a bread salad. Great idea. If I try this soon I'll jot in a note on what we thought.

Great News! You realize we all have to try your recipe now. I think it sounds great, can't wait to give it a try. I love bread salad, but have never made it.

That's FANTASTIC! I can't wait to see what it is! I think that Bays are the best commercial english muffin!
