Bays Spring 2009 Contest
Contest Theme: Bays “Sensational Spears”
Asparagus, the young shoots of an almost leafless plant and a member of the lily family, are the harbinger of spring in most vegetable gardens. The freshest asparagus are grown between February and June, which makes this peak season to “stalk up” and enjoy these long slender spears in all varieties be they purple, wild, green, variegated or tender white.
We’re looking for your best recipe featuring Bays English Muffins and asparagus in an appetizer or main dish. The best entry will win a $500 gift certificate from Williams-Sonoma and a case of Bays Original English Muffins. All entries will be judged by George Bay along with a panel of independent judges.
Bays “Sensational Spears” submission dates are March 10-31, 2009. The winner of the Bays “Sensational Spears” recipe contest will be announced at this site on April 15, 2009.

Yeah, the trick is coming up with something which is not eggs benedict.

Question is, what? English muffins and asparagus aren't exactly a natural combination.

Too funny. I am reading the post about the Asparagus and English muffin contest. The first thing that pops into my head is the Eggs Benedict. Then I scroll down and it seems we all think the same.
When I was a kid, I didn't like Asparagus. The main reason being that it was always overcooked. Now I love it grilled or blanched for about a minute.

I was thinking of somehow using roasted asparagus with chicken and Havarti cheese on a sandwich. Something warm with a crispy crusted english muffin. Maybe a wasabi mustard on it.

My idea was kind of a white pizza (some kind of white sauce, asparagus, parma ham and shards of parm. cheese under the broiler). Or using the muffins as a crumb topping for a gratin. I agree with Josh, asparagus and English muffins is not a natural combo.

You guys can have all my ideas as I don't think I can enter these contests.
