I made a roast duck, mashed potatoes, chestnut and sausage stuffing, baked sweet potatoes and cranberry orange relish. I had some small pies left from last year so I baked off an apple sour cream and a walnut chocolate, and then made pumpkin cheesecake in the instant pot because T-day with no pumpkin? Inconceivable! We have plenty of leftovers but I think dinner tonight will be French onion soup from Trader Joe’s because I’m just that toasted.

We got home late the night before, so opted to skip Thanksgiving. Went to a restaurant that was full, but sat in the bar and ordered off the menu.
Friday, I spatchcocked one Cornish hen, roasted one sweet potato, and peeled a few asparagus, and we split everything. It kind of looked like a T'Day dinner, but much lighter.
We were just so overloaded from a week of eating cheese, we wanted simple.

We were planning to go to Valencia in the spring, but I'm expecting that Omicron will cancel that for us.

Fuzzy,

Right now, the major airlines are all allowing refunds if you cancel due to C19. SO, we're going to book the trip, and cancel later if we have to. Prices are falling, so it's a good time to book. If we have to cancel, no harm done.

When were you going to Valencia? We're looking at the last half of May.
