Well I'm late to the party on both of these things but I figured I'd chime in anyway and say WHOA! Darcie's Pancakes are seriously amazing! I've had the recipe in my drafts for ages and was looking for a quick recipe tonight that didn't require separating eggs, etc. At first I thought maybe I'd done something wrong because the batter was so thick. But they were heavenly.

And several weeks ago I finally got around to joining Eat Your Books and it is soooo cool. Being able to instantly search almost all of my cookbooks plus blogs for a particular recipe is an amazing timesaver!

Emilie - In case you haven't read the thread, they make GREAT waffles. We double the batch and freeze the balance of waffles for a quick breakfast from the toaster (use your lowest setting). :D

It is a thick batter. I have to add extra buttermilk when I make them with white whole wheat.

So glad to know it works for waffles too. Thanks!

I'm glad you liked the pancakes. I do the blog on EYB, though it's not as much fun as my former blog (have to fit the company's voice and goals). Still, it's fun to make a little money from my hobby/obsession. :D

The lifetime EYB membership was one of the best early-adopter decisions we've made (can't get lifetime any more...).

I haven't made the pancakes but I truly enjoy EYB. Thanks, Darcie
