When using a microplane zester I always hold the fruit still and run the zester over the top. You can see what you are doing and the zest fills up the channel of the zester. I thought everyone did it this way, but apparently CI's illustrator runs the fruit over the zester.
They do? That sounds like a good way to take off your fingertips.
Although: I hold the zester still and move the nutmeg when grating nutmeg. It really doesn't work the other way.
Tip: when making savory fritters, cakes (like crab cakes), or similar fried batter foods which ask for minced onion, consider grating the onion on a box grater instead. Grated onion incorporates better without losing any flavor.
