 Post subject: "Fine" Cornmeal?

So, if you see a recipe which calls for "fine" cornmeal, what does that mean exactly? Corn flour? Medium non-stoneground cornmeal? Something else?

I have some stone ground yellow cornmeal that's as fine as talcum powder. I don't know the brand because I transferred it out of it's paper sack into a plastic container (bugs are everywhere in Florida). I'll be happy to check the brand when I go to the grocery store this weekend. It's nothing I seek out - it's just always available at Publix.

I also have a container of the Quaker stuff and of Bob's Red Mill, and they're both much more coarse.

Great Question. I don't know if they mean "fine" as in "good", "superior" as in a high quality versus mediocre or poor cornmeal , or by grind size as in coarse, medium, . . . Even so, one man's fine is another's flour. The answer lies with the author of the recipe, unless you're willing to test different batches.
