I finally used some of the goat we received from a friend; we made a curry. It was fine, good even, but I have a little mental block about eating it. DH will have to finish it all, I'm afraid.

Some of the best meals I've ever had were Greek goat and Italian goat - usually simple kabobs over a very small wood fire (think small hibachi with twigs or grape stems), garlic, oregano, salt, pepper, and sage infused olive oil drizzled over while it roasts and finished with a small squeeze of lemon just prior to serving - HEAVEN! Good Golly - last time I drove through Texas it seemed ya had more goats than cattle - EAT'EM!

One freezer down and 2 to go. The contents created 2 wonderful soups/stews: chicken and beef. I found chicken and beef broths, 2 freezer-burned chicken breasts, 3 freezer-burned t-bones, 2 beef gravies, one chicken soup, heirloom tomatoes, peas, parmesan rinds, beef bones and innumerable bread ends, obscure flours, and Chinese herbs. i also liberated 8 Tupperware containers of varying dimensions. Frank, you will enjoy that the small, round container is bait (minnows) for pickeral fishing in the spring!!

Wino, good work! I think we'll never have an empty freezer, but at least now I know nothing in there is less than 1 year old. Shepherd's pie for dinner last night, I have 1 more in the freezer. Pulled a 4 cup container of mashed pots from the freezer on sunday for dinner. I bought 2 centre cut pork loins last week at Costco, since they were 1-already cheap and 2-$5 off. So a 2 foot loin for $10. I'm going to halve one and vac seal the halves and cube the other for souvlaki.

On filling freezer mode this weekend. 3 bags of boneless skinless chicken legs (in a teriyaki marinade), 15 containers of pasta sauce, about 180 meatballs (from around 10 pounds of beef/pork/veal), and tomorrow am turning 10 pounds of ground beef into taco meat. All this since I got a job and start on April 2nd. So I'm trying to fill the freezer with easy things for DH and me for weeknight meals and/or things that can go into a slow cooker in the a.m.
