Hi Todd Good veal, sliced properly, does not really need to be tenderized in my opinion, although that helps of course. That sucks that your meal was not prepared properly.We actually moved away from veal cutlets a few years ago for a variety of reasons (not the least of which was my parents trying to feed 9 grandchildren with veal - $$$ yikes) and now use pork cutlets. My parents buy a shoulder and my aunt (a butcher) slices them for us. Either that or chicken cutlets. Still trying to get to Vegas......
