Ha Frank, one of my shoveling priorities has been keeping a corridor open to the grill!! ;)

Lynn, good to see you have your priorities straight.

Wino, good thing you had Mr Baily there to console you...I am glad to help.

Only -46 this morning so I shoveled out to my grill, but not the 25 feet to the Smokey Mtn.; the Weber grill is only 2 feet from the back door but 2 days of blizzards obliterated it from view - I should just leave the darn thing on!!

That chili's going to the test tomorrow! That'll get rid of this steenkin' weather!!

P.S. Girls grilling - HA! What's next? Almost needed my Depends after that one...

roflmao...

By God Frank, I've got to try this! And my grill is right out on my deck, so no matter how cold it is here, I grill. 8-)

Hey Frank, what's a "Chili grind?"

Pete,

Chili grind is something very coarse, made with plates in a meat grinder with 3/4"-1" holes...something we can't grind at home! I try to approximate this by using some 1/2" cubes, plus some slightly coarse grind meat (1/4" holes in the grinder). Works well, though it's not quite the same.

BTW, Frank, you'd have been proud of me! I grilled some things on NY's day, and while it was only about 33º, with no snow, the wind was in excess of 50 mph gusts! I had it planned, however, and no way those were getting done inside!

Dave

Me too, over with a feather, like eb - a chili recipe from Frank! Will wonders never cease?

This does look like a stellar recipe, Frank. Can't wait to try it. If I serve it with pinto beans along side is that blasphemous? Or only if they are inserted into the chili pot? ;)

BTW, congrats and best wishes on the adoption - hope you'll keep us updated :)

Leenagrace...part of my longstanding hesitancy of posting a real chili recipe was that I felt that as soon as I did I would begin to hear of the wonderful virtues of putting beans, chocolate, & God only knows what else in it.

Please remind yourself of the word "steller" that you used...it is indeed a very, very, good Authentic Texas Chili, no beans or additions are necessary to make it "better".

When beans are put into this mix it is no longer chili, but some sort of a bean & meat soup / stew. That being said...you can modify as you see fit, please rename your concoction something other than "chili".

We hope to have the girls home by early Feb. Thanks for asking!

Dave...you need to get with wino & encourage him...he seems to be a grilling wimp...even Lynn is outgrilling him...geez...

Dave / Pete,

I buy a whole roast & put the course plates on the old KitchenAid & that works fine. Or you can have your butcher do it.

Yes, Frank, I did grill last night in the pouring rain with an umbrella. It got so windy by the time that I finished that the flames went out of both bars.
