Hi,

Kenji's confit is excellent and extremely easy.

Crystal,

Just go buy a duck. Split out the breasts for a saute. Use the leg/thighs for confit. Make stock (or reduction) or soup from the carcass. Make cracklins with the skin.

I'll toss in a recipe for the gastric.

I'm with Tim on this one...wish I could buy legs only, but my only access to them is through the restaurant, and I just don't need the volume I'd have to buy them in.

(Don't call me the one-trick pony, but we are now using sous vide for all of our duck confit, with great success.)

Tonight was our sat tradition.... steak. Straight up steak, SV'd and seared with some tarragon butter, mashed, and SV'd brussel sprouts browned up in a bit of butter. Before supper it was just some croutons with smoked salmon, onion and capers to ward off hunger. Somedays simple is nice!

Minestra tonight ... with "record low" temps in SF (38F ... gasp!) it seemed like a soup night. I got carried away, though, and made 6 quarts. Given that there were only 3 of us, there's a lot left over. Accompanied by "flatbread" made of refrigerated pizza dough with olive oil and 3 herbs.

I had spicy sausages at a hockey match. They were pretty good, even though our team lost (total disclosure, first hockey game in years, don't know if I can say "ours").
Tonight I am doing CI's stromboli with sausage, peppers and onions as per my daughter's request. Like Fuzzy, I bought the dough. I love the idea of using it for flatbread too. That is going in my mental Rolodex.

We had sushi. I am trying to clean out the frig before our trip & we have fruit & veggies to eat. I don't think I will do any cooking because I always have leftovers & the point is to clean out the frig. We are making Darcie's pancakes for breakfast - will report back! :twisted:

We got caught up in a wine tasting that wrecked my dinner schedule. Instead of London Broil (yes it is chewy but we like it) and sauteed mushrooms, I pushed the easy button and we had a salad with poached chicken strips and grapes with leftover chocolate cake for dessert.

The wine star was a South African Pinotage. I'll make an entry about it in the wine section as it is worth it's own discussion.

Darcie's pancakes were great. I don't normally eat pancakes, but these were great.

We are going on a cruise through the Panama Canal. We went on a cruise this spring. I thought I would hate it, but it was fun. I don't like having to be here or there at a certain time, but it was great not to have to keep repacking every day.

I am hoping this trip will be great. We have allready hooked up with 2 couples for dinner & some side trips.
