I would also recommend
The Food of Morocco as your first choice if you can afford the $$ and the shelf space. If you get this, you probably don't need other Moroccan cookbooks.
If that book is too expensive or too large, here's some others I've tried and recommend:
- Couscous and Other Good Food From Morocco. This is Paula Wolfert's first book, and is widely available used for cheap.
- Moroccan: A Culinary Journey of Discovery, by Ghillie Basan. Ghillie is a cookbook-writing superwoman, actually, and has multiple Moroccan cookbooks, including one exclusively on Tangine cooking.
- The Vegetarian Table: North Africa by Kitty Morse is good enough that I would check out her other Moroccan cookbooks.
Note that I don't do tangine much because I don't eat meat, and the fish and veggie tangines are kind of boring.
