Post subject:  Peach problem

I'm catering a birthday dinner tomorrow night for a friend. The birthday boy loves my pies, and his wife had a bought a case of our local peaches last summer, sliced and froze them.

As I thought would happen, they're turning to complete mush on defrosting. Here's my thought, and what I'm currently just trying. Put them in the dehydrator for a few hours to get just enough of the moisture out they feel texturally like a "fresh" peach. Not sure it will work, but I'm trying it.

Alternatives to how to use the peaches if the experiment fails?

Even with fresh peaches, I usually sugar and drain the fruit, then cook the liquid down to a syrup and add back into the fruit before baking. It works pretty well with frozen peaches, too.

These peaches were beyond textural repair. Their freezer was not kind to them..

So, I'm making an apple pie, and it will be topped with a whipped cream and vanilla ice cream concoction with Frangelica, pureed peaches and dusted with toasted sliced almonds.

When one is given lemons...

If you have extra maybe make him some peach muffins for breakfast treats. Or shot glasses of peach/mango smoothies type thing to have on the side of that incredible sounding pie.

Now why didn't I think of that? Layered in parfait glasses too with a graham cracker crust.
