Every little bit helps, when it comes to better farming. I would be interested in seeing a cost comparison for the different production methods.

Wino, I always freeze the extra loaves I bake, and they keep well in the freezer for a month or two; otherwise, they will mold eventually, esp. in the summer (I don't keep them out longer than 2 days then - after that, it goes in the fridge). I rarely only bake one loaf, though I did recently, to try some ajwain seeds (a.k.a. bishops weed or carom) in a loaf, in place of caraway. It was OK, but I think it would be better in a small amount addition to regular caraway, like I do with russian caraway (a.k.a. nigella or kalonji).
