I dissolved it again, and added just a little brown color, then re-gelled it, and it looked lighter! And I'm not sure what that ring is that forms in them - like something settles in the mold. Maybe I should stir it while semi-gelled - not familiar with making jello, but I think that's what they do! |

Dave, Those don't look like the light pink veal brains that were served when I was a kid. I was a lucky kid eating sweet breads, boiled beets and creamed can of asparagus jello. cc |

Pork brains are much darker than veal brains, which makes sense, as it is darker in the muscle cuts, as well. It's been years since I cooked any, and I was just talking to a friend of mine about getting some sweetbreads when he visits, because the last time both of us had them was when we cooked them here in the mid-80's. OMG, that was a long time ago! |
