From Nicaraguan Cooking, Trudy Espinoza-Abrams:

p. 75
Pinol de Iguana
  • 4 cups masa harina
  • 1 black iguana with eggs (there is no substitute for iguana!)
  • 2 onions, sliced
  • 2 green bell peppers, chopped
...

Instructions:

Cut off the head, make an incision in the abdomen, and remove the eggs and innards. Discard the innards. Wash the eggs in cold water ...

OK, so how do I know the iguana has eggs? Do I pick up each one at the store and give it a squeeze? I know my grocer frowns on squeezing the iguanas.

You know Darc, I was going to ask the same thing. My meat manager always yells at me when I squeeze live animals...they scream or yelp or fart. Go figure.

What, you guys buy your iguanas? The quality of a hand-reared iguana is oh so superior to that of what you are able to find at the average grocery store. If you are going for a commercial iguana you might as well just save yourself the money and pick up a couple geckos. Stick some of that Kraft mac and cheese in your cart while you're at it.

The mountain lions eat them if I try to raise them out back. I'm just doomed when it comes to raising lizards. Oh well...
