So tonight I used up 4 separate leftovers to make dinner and ended up without new leftovers! I made spinach ricotta gnocchi with marinara sauce, and served them with roast chicken.
The spinach, ricotta, sauce and chicken were from previous meals. It feels very virtuous.

We've been trying to use up stuff in the freezer in prep for holiday cooking. Slow progress so far; most of those things in the freezer are there because we didn't have immediate ideas on using them.

Back when the pandemic first hit, our grocery stores were out of meat at times, and limiting purchases at other times. I had 2 houses, only 8 miles apart, and 2 big fridge/freezers. I was one of those caught without TP, and getting supplies from kind friends, etc. I WAS NOT going to be caught without meat!

I shopped as often as I could, usually at Costco and bought bulk. Broke it down, packaged it in single meal sized portions, and filled 2 freezers. A year ago we moved into just one house, and I needed to get a small stand up freezer to hold all this frozen food. I am still trying to work my way through all that frozen meat! I'd like to get this little freezer out of my dining room once and for all! I just can't seem to stay away from a bargain, so I keep buying stuff. almost as fast as I use it. I need a good 3-4 months of 'clean out the freezer'.
