Steak night here. DH and I shared a sear-roasted boneless ribeye along with classic steakhouse sides of sauteed mushrooms and onions, Caesar salad, and cheater cheesy broccoli (I just mix broccoli with a tbsp or two of light sour cream and some grated light cheddar, and top with a sprinkle of Parmesan before baking it). DH liked it, but I'm feeling a tad sick. I think chicken breast and fish will be on the menu for the next while.

Last night it was porcini and goat cheese risotto with SV chicken in a roasted tomato, pancetta sauce; wilted spinach with lemon rounded it all out.

Last night just some pasta sauce from the freezer but Friday I think I did OK. We invited some friends and when I asked the Mrs. if she was hungry for anything she said "margaritas" (you see now why they are my friends). So with the margaritas I made a hot artichoke dip with marinated artichokes, cheddar, green onions and green salsa. Starter was a salad with roasted peppers, oranges, feta and anise with an orange/anise/chili dressing that I adapted from the Coyote Cafe cookbook (adapted partially due to not being able to get cool peppers but also because his salad dressing needed some work). Dinner was Snapper Veracruz (epicurious, very good) and cinnamon rice. The rice was also from the Coyote Cafe but that recipe was also messed up (what is up with that guy???), he called for 2 cups rice and 6 cups water that you were supposed to boil down til the water was level with the rice and then cook on low for 20 minutes. I let it boil for about 5 minutes but then decided I would have a pan of mush so I drained the water and continued covered on low. Great taste, it would be excellent with a Greek-style grilled lamb. Dessert was grilled pineapple with rum and brown sugar with ice cream from the store (but the nice kind in the tiny containers).

Mary

PS Amy, the risotto sounds delicious but I stop reading whenever I see "SV" as I really don't have the room and should not be led into temptation. I am sure that part of your meal was lovely too. ;)

Mary,

You don't need space really, just $$...and, the rest of the meal was delicious as well.

Your menu sounds great!

Story of my life. Not enough space in my kitchen too much space in my wallet.

Had some friends over and due to the incapacity of my stove -- getting repaired tomorrow, did what I call a Formaggio Kitchen PIcnic (named after the great cheese store in Cambridge). Sometimes the best cooking is the least cooking (though I did make apple streudel and the bread was baked and out of the freezer:

Lindsay,

Looks like a proper Tuscan alfresco meal to me!

Lindsay,

I can't decide if that picture is making me very hungry, or making me feel rather full. Regardless, it looks divine!
