It's a simple recipe, and oh so good. And, you can doctor to your heart's content. Personally, I like it pretty much as it is. And Tim, gorgonzola dolce would work great.
Squash Soup with Green Onion and Gorgonzola (from Georgeanne Brennan's The Food and Flavors of Haute Provence).
3 lbs. Winter squash 6 tablespoons unsalted butter 1 1/4 cups chicken stock 1/2 cup half-and-half 2/3 cup minced green onion 1/2 ounce gorgonzola
Preheat oven to 350.
Remove seeds, etc. from squash, cut into wedges and dot with (about 1/3) butter. Bake until tender, about 50 minutes. When cool, peel from skin and chop.
Bring stock to high heat, just below boil. Working in batches, puree the squash, stock, 1/3 of remaining butter and half-and-half in a blender or VitaMix (on low). Transfer to a saucepan, process remainder and add to saucepan.
Add green onion and simmer until soup is hot. Add gorgonzola and last bit of butter.
I usually add a bit of crème fraîche on top, with a sprinkling of something else in the meal to tie it all together.

Tonight was Chicken Soup with Apples and Leeks (Splendid Soups again). I used the mushroom, curry and calvado's options. With 1/2 cup of vigenegar in it, it most certainly is not a conventional run of the mill soup, but it was actually very good; a nice blend of hot, sour and sweet. The "sweet" was at a shocking level for soup, but nicely balanced. I made some stock with the carcass to boot  Next soup is Amy's squash soup ... I have one in the basement waiting

I was going to make Amy's soup last night , when son called and said Saturday night, and said, "you remembered Dad's birthday is tomorrow, right?" Um, no. Not even after nearly thirty years. Gets lost with Christmas. So, we went out for dinner. Amy's soup tonight. I'm probably going to have to get the book Paul keeps talking about...

Note I am not recommending the book, I've not made much from it yet and one was a "miss". But it is an interesting book, and quite thorough (as Peterson tends to be)
