Post subject:  Meat Cleaver

I am in the market for a meat cleaver, after breaking down my turkey this year I really could of used one. I actually thought I had one, but it is no where to be found. CI recommends Global. What does everyone here like??

For known reasons, I have no opinion on meat cleavers. However, my caution with Global is the metal handles can be very hard to grip when your hands are greasy or wet, which seems to me like it would be a non-starter for meat cleavers.

I agree with The Fuzzy; I use 100 year old cleaver from China with a wooden handle and it works perfectly.

I have a Forschner one with the fibrox handle. Dh just used it yesterday to break up the raw bones. I like that the handle is not slippery and it seems to keep its edge well. I got it after Steve broke my Chef's knife cutting up beef bones for the dogs.
