I don't cook them at all. The recipe is from a good friend of mine who ran a small restaurant in Dannebrog for years. She finally closed it a year or so ago at 85 years old. I've eaten them there often enough.

Harriett had two old gas ranges sitting side by side in her kitchen and the aebleskivers were cooked stovetop. Her pans made 7 at a time and she turned them with a knitting needle.

The quote about her pancakes having only side came from Roger Welsch, a writer and host of the Live from Nebraska segment of the Charles Kuralt show. A daily visitor to the restaurant.

My husband is Danish and one of the first things his mother gave me 36 years ago was a well seasoned pan. I'll PM you his grandmothers recipe when I get a minute.

My pan unfortunatly has been lost for 10 years now in a box somewhere in the basement. :x We have searched high and low since we moved into this house. It's in a box with other cast iron pans. I saw it once down there a few years ago and it has now disapeared along with the base to my presure cooker. It is so damn agrivating. I want an Aebleskiver! We always ate them with butter and brown sugar.

Good gosh! I love my ricer! Following a suggestion from one of the food writers, I tried using it for "other purposes" and promptly broke it. My mashed potatoes suffered drastically. When I found someone to repair it, I was ready to dance a jig. Now, I am not dissing the food mill. I've seen them, wanted one, but never actually popped for it. Someday I may see the light, but for now, "Rice me, daddy, eight to bar".

I will say that the odd curved chopsticks they sell for turning aebelskivers are worthwhile if you decide you like them and want to do a lot of them: http://www.williams-sonoma.com/products ... ing-tools/

Also, try putting 1/2 teaspoon of jam in the center of each aebelskiver.

Here are some ebelskiver recipes from WS. They also sell a book that includes savory recipes. You can check your local store.

I was so excited to find a used but like new pan but have not yet used it. I even purchased the WS mix and the special turning tools at the WS outlet at great prices. (You might want to try chopsticks for turning.)

My husband uses the egg slicer to slice the normal way, then rotates the sliced eggs and slices it in the opposite direction. This makes the perfect egg cubes for egg salad.

I was cooking with a friend yesterday and was shocked over her lack of gadgets and gizmos. She is an excellent cook but I am buying her a zester and a bench scraper very soon.

I do the same thing. I don't use my egg slicer often, but it's perfect for egg salad. And, every once in a while I seriously jones for some egg salad.
