I have to defend egg peelers here -- if you get a sturdy one, they're great not only for eggs but mushrooms, fresh mozzarella, and strawberries.

Well, our aebelskiver pan sees regular use (once a month anyway), but then we like aebelskivers. We even picked up a second one for Oregon at an estate sale.

Of course, if yours is non-stick, toss it now. Only the cast iron ones are any good.

I had no idea of what this was and had to look it up. Turns out ive had them at our local market, but they just called them Danish pancakes. Now I'm curious to try filled ones....

This is my first effort. The pan is cast iron from Norway and appears to be well used. Any recipes you'd reccommend? I've got one from Ruhlman but I read they can't be used on electric ranges. Do you bake in the oven or on top of the stove. Do you have any savory recipes?

Here is a traditional Danish Aebleskiver recipe from a traditional Danish cook in the traditional Danish town of Dannebrog, Ne.

2 c flour
1tsp baking powder
1 tsp baking soda
3 tsp sugar
1 c buttermilk
1 c whole milk
3 eggs separated

Combine first 4 ingredients. Add buttermilk, milk, and egg yolks. Beat egg whites until stiff and fold into mixture,. Heat aebelskiver pan until very hot. Add Crisco, Pour batter into holes. Lower heat. Turn with sharp tined fork or knitting needle. Turn 1/3 around at a time until done in center. Dip in butter, then sugar. Eat with fingers or serve with maple syrup. Harriett served with ham, bacon, or sausage.

Danish pancakes are not the same as Aebelskiver. Danish pancakes are so thin they only have one side, and are cooked on a griddle. Her recipe is simple. 5 eggs, 2 c flour, 2 c milk.

Feta-Lentil Salad with Almonds and Dried Cherries in the works.

The 4.5 qt. Pyrex bowl with a cover in use nearly every day and the little bowl scraper comes out of the drawer nearly every time a knife, grater or shredder does.
