What kind and size fish are you cutting?
Being a fisherman, I use a good basic fillet knife.
Standard kitchen knives are too stiff, with some exceptions.
I happen to have a Forschner, but there are many others.
Skinning a fillet usually takes a few seconds.

Good Gawd those MAC's have me salivating! Okay, here in the Philippines where a shave and a haircut are still actually combined, many barbers are using straight razors that have replaceable blades. This might be both a handy solution and interesting conversation piece. I've been thinking about getting one to use as a baker's Lame aka scoring knife (which has none of the flaccidity problems mentioned earlier in thread). :P

If you want something that is sharp when purchased, and will stay sharp for a while, look at the Tojiro DP line.

On the other hand, if your only goal is to score fish, a 6 dollar utility knife from big box will do quite well.

RE: Mac JU65 - I'm not as impressed as the other reviewers on Amazon and CI. Thus, I am a bit underwhelmed and disappointed :(
I was overwhelmed by the MTH-80 (or TH-80 on some web sites). The knives are very similar and that is part of the problem. The TH-80 has scallops along the sides which makes slicing thick vegetables (potatoes, turnips, etc.) very easy because they slide away; not so with the JU65, those vegetable stick to the blade and, thus, slow me down. The knives are about the same length and super sharp (literally - I shaved hair off my arm with both knives straight out of the box!). My wife and I have forced ourselves to use the TH-80 for the past 3 weeks to try and get used to it but we actually want to use the JU-65. We wouldn't buy it again but I may just buy another JU-65 for when I'm flying in the kitchen. :D
