I bought an egg separator (I don't really know why except I figured it would be less messy than using my hands). Not half as good as using my hands. I like the little containers though to keep whites and yolks separate. I don't use my cherry pitter either and my ricer is a b***ch to use (though it does puree bananas well for baking). I do use my ice cream maker, just bought a citrus juicer which I love ( to juice all of those lemons from my tree every year (my hand was getting sore from juicing by hand), love my apple peeler corer (recommended by CI, though it's getting a bit finicky), love my heat proof glass mixing bowls for double boiler action with melting chocolate. There's more but I can't remember.

Well darn, wino. I'll start using the ricer for tuna. I never use it for potatoes. But, I do use it to squeeze spinach, and it works great for that.

Useless: HB Egg slicer, garlic slicer, garlic press, cherry pitter Useful (but don't get used much): Ice Cream Maker, Staub DO, Garlic Peeler (the rubber tube) Used frequently: Rasp, julienne peeler, immersion blender and attachments, food saver
I'm sure I'm leaving out a bunch of obvious ones but those are my tops, for today at least.

I have a ricer which has (actually, HAD) plates with large and small holes, and they didn't really stay in place while doing potatoes. HOWEVER, nothing does better making spaetzel than the large hole plate, so I attached it permanently with a bead of silicone seal around the inside. It is very similar to a spaetzel maker a German lady I know has (who also uses it for ricing potatoes), and even less dough comes out the edges.
I tossed my old zester, once microplanes came about, and they work so much better.

Useful: I love, love my pressure cooker.

Much more useful then I ever imagined: Chamber Vacuum. Also ridiculously over priced (but quantities are low and it is made under respectable labour laws, so there you go), ridiculously heavy but gets I would sorely miss it. Just yesterday I packed my fajita chicken bits with the marinade, packed a chicken carcass for later stock making, packed chicken legs with brine, later packed legs for cooking, packed cheese for long term fridge storage.... and that isn't a wildly unusual day.
Useless: Egg slicer, never used. I had some kind of theory of using it for slicing mushrooms or something. I must have been super tired or something.
Mostly Useless: Panini press. I was romanced by its possible use as a temperature controlled grill, but it sucks. As a press, it is ok, but if I had easy access to a some cast iron plates or something it would have made me way happier.
Could be way more useful: Electric pepper grinder. Its very slow. It hardly holds any pepper. But, I still use it because when I deal with meat I typically have one clean hand, one dirty hand, and a single handed pepper grinder is real nice. But man, could this be made better. Give me an industrial version of this.
Could be way more useful: Electric knife. I like the electric knife for certain things, like cutting up many slices of bread at a time for croutons, or cutting a lot of cooked meat into strips. But the cord is a killer, and the reviews of the cordless ones say they suck. If this was powerful, cordless and had a well made caddy, it would get used. As it stands, it does not.

I'm with Paul...
I couldn't live without my pressure cooker...living at altitude has a lot to do with that.
My chamber vacuum and PolyScience immersion circulator are my two best friends in the kitchen.
