Hi Gerard.

Fish skin is such tough stuff. If I wanted to score it I might try the box cutter/utility knife/razor knife kind of thing. My knives are notoriously so-so in sharpness.

Gerard,

It sounds like you're not taking care of your knives. How often do you steel them? Sharpen them? I steel my stainless knives every 3 or 4 uses, and my carbon steel knives every use.

I use a Henkels Four-Star filetting knife. It's not a particularly good filetting knife, but scoring a fish is no problem. It helps that the knife gets used only on fish.

Heh, I also guess we didn't ask if it was descaled... some fish scales are quite thick and tough.
