The last section confuses me. A cup of ketchup isn't 8 fluid ounces??

Pete,

Ketchup has a higher specific gravity (1.09 - 1.14) than water. The soluble sugars dissolve into ketchup and tomato solids combine to increase the weight of ketchup. Therefore a cup will weigh 8.72 ounces to 9.12 ounces, I THINK.

That I understand, but the table converts a cup of various liquids to fluid ounces, and then to underscore it, presents it also in milliliters.

I believe the numbers if they're actually avoirdupois ounces and grams as opposed to fl. oz. and ml.

If you had read the entire thread before criticizing, you would have answered your own question. Over time, I have compiled it from various sources, primarily CI, the booklet that came with my scale, and The Book of Yields http://www.amazon.com/Book-Yields-Accuracy-Costing-Purchasing/dp/047145785X. I use it when it suits me. I offered it if anyone else wanted to use it. I'm now sorry that I did, because apparently you are all much more knowledgeable than me.
