Post subject: | Vegetarian Burrito with Verde Sauce |
Does anyone have a really good recipe for a veggie burrito with verde sauce? I have been searching for something, but it seems most recipes come up a bit short. I want something with a little rice, black beans, veggies and a great sauce to pull it all together topped with lettuce, tomatoes and guac. The last verde sauce I made wasn't all that great, so i think I'm missing something. Thank you! |

It sounds like you have the filling you like, now you just need to adjust the sauce. What was the last one lacking? |

What do you mean by "verde sauce"? Do you mean tomatillo salse verde, or something else? |

I really love this Tomatillo salsa: http://robertosantibanez.com/recipes-2/?id=129 With raw tomatillos it is pretty sharp. Other then that, I think a great veggie burrito would mostly come down to the beans, though to be fair I like good beans enough that some red rice, black/pinto beans, a bit of veg and some salsa on top would be lovely, so I might not be the best judge ![]() |

Thank you all. My problems in the past, I think, have been that the burrito has been a little dry and I counted too much on the sauce to add the moisture. So I need to figure out how to add a little moisture to the filling, then add the sauce over the top. Does that make sense? The last tomatillo sauce I made just wasn't that great. And I don't want it too spicy because I'm making them for a group and I am always afraid of overdoing it. I'd rather they each bump it up a little with salsa. Any ideas to bring moisture and flavor to this? |

Cookie, With the caveat that I never make burritos because I live on the West Coast where taquerias are more common than gas stations, and cheaper, some ideas: - the beans should be wet, soaking in their cooking liquid, and drained in a slotted spoon just before putting them in the burrito - more diced tomatoes - two words: sour cream |

Thank you! I live on the west coast as well and have had some superior burritos, which I have been trying to replicate. Moisture is the key, I know. But I don't eat dairy, so no sour cream or cheese. I will definitely add guac. Any ideas on a good verde sauce? |

From my casual perusal, Avocado is about same fat content as good sour cream (15%), and is even better to boot ![]() You should try that tomatillo sauce. It is special (and super easy, no cooking). |

Made the burritos for an event this weekend...and they turned out great! Thanks, Paul, for the verde recipe. It was much better than the other one I had been using, although the ingredients weren't all that different. I started with rice and beans and added as many roasted veggies as I could, some herbs and spices, and topped with guac and the verde sauce. And there was sour cream for those who wanted it. Thank you all... |
