The second turkey for thanksgiving will be cooked on a Weber kettle. I'm looking for a recipe for smoked turkey that doesn't turn our rubbery skin.

Fine Cooking had a John Ash recipe that looks pretty simple but I'm not sure about all the stuff in the brine. www.finecooking.com/.../maple-brined-wo ... turkey.asp

Any thoughts?

Tim

Touche'

I'm actually going to try this recipe on my "smoker" It is hard for me to vision a smoked turkey with crisp skin...does not compute...

Far too cold here. We have snow now. It looks tasty in the magazines though.

Yeah, I miss Texas. It's what I get for being married to a Pegger.

As I often do when you guys use terms with which I'm unfamiliar, I googled 'pegger', and I really don't think that's what you meant!

Had to google it...too funny. But methinks she means the second definition: a person fron Winnipeg.
