The second turkey for thanksgiving will be cooked on a Weber kettle. I'm looking for a recipe for smoked turkey that doesn't turn our rubbery skin. Fine Cooking had a John Ash recipe that looks pretty simple but I'm not sure about all the stuff in the brine. www.finecooking.com/.../maple-brined-wo ... turkey.asp Any thoughts? Tim |
