Post subject:  Ketchup (Catsup?)

The challenge with doing anything to ketchup is not turning it into some variant of BBQ sauce. Guys like me want to keep the ketchupness of ketchup but also add a little extra touch to it to give it some wow. Try this on you next hotdog or burger.

1/2 cup of ketchup
1/4 cup tomato paste
1/8 tsp cayenne pepper
1/4 tsp chili powder
1/4 tsp chipotle chili powder
1/4 tsp salt
3 pressed garlic cloves
2 - 3 TBS port

Over low heat mix the ketchup and tomato paste until combined. Add the garlic cloves, dried spices, and salt and let sit on simmer for 15 min. Remove from heat and add desired amount of port to bring back sweetness and give it a little more depth.

Cool in fridge to use in about an hour; it tastes much better the next day.
