Here is what I found in a popular Argentinian cooking site (translated):

"Currently chivito has the traditional goat, plus steaks (veal and ham), mayonnaise, cheese (mozarella), lettuce, sliced ​​tomato, egg, red pepper and green olives. Over the years variations have been invented such as as the Canadian Goat, which includes pancetta or bacon, and a fried egg."

I also work with a bunch of Argentinians. I'll see if anyone can point me to a site with an English recipe.

Andy raves about a torta he ate (a lot) when he was in NYC for three months last year rebuilding MammaMia.

Could have had Cabeza, Carnitas, Chicharron, Lengua, Adobada, Al Pastor, Barbacoa, Bisteck, or Fajita.
