Given a choice between a chemical problem and an equipment problem, I will cast my vote for the equipment. Since my ancient Cuisinart stick makes pretty good mayonnaise with little power, I would look at the container shape. Something may be preventing a vortex strong enough to pull all of the oil down into the blades where the emulsion is formed.

I've never gotten my immersion blender to make mayonnaise properly; this is the first time I've heard it's supposed to work.
On the other hand, my food grinder makes mayo in about 10s, and I don't even have to measure. I think the shape of the blades has something to do with it. That, or speed.

Okay, when we go through this current batch of "sauce-like" mayo, I will head to the farmers market and get a fresh batch of eggs, go back to the original reciepe and try again.
I appreciate all the responses and I am now off to read the McGee article.
