Barry, I meant to ask the store where you purchase them to order them for you, i.e. outside of their regular order they would tag on X extra boxes that would earmarked for you. That way you won't incur shipping since it's not a separate order. I've done that with some stores before and most are happy to do it since it allows them to better manage their inventory.

Hello Jean, I am not sure it has much to do with the actual chain which is Shaw's. Barbara works at Hannaford and even though they carry the box version of the soup that much more expensive they said they couldn't get them, not sure if I buy that. They do allow us to buy Asci berry juice by the case at a reduced price over individual that works out really well. I sure am hoping that I find a way to make a good soup and won't need it.

Dave, I got my lemon grass yesterday, it isn't in stocks it has already been peeled and they are pretty small pieces. All the times I have had Lemon Grass soup, I never detected anything that would have been Lemon Grass, so I am thinking they either make a sachet or their pieces are large enough to just take out. I think I have some cheese cloth, I guess that is what I will go with. I didn't have any Pork or dark Chicken(or any chicken) but I do have some beef, I should think that would offer some good flavor. I am thinking to make it a little richer, I would use 2 cups of water and 2 cups of Chicken broth.

Well, this was my first try. Far from what I envisioned but not bad either. I think that cutting the water with 2 cups of chicken broth was wrong, at first it tasted like chicken soup, next time straight water. I took your basic recipe and worked with the flavors a bit with some Tamrind, soy sauce, lime juice and mostly Thai Chili sauce. In the end it is quite good, Barbara even liked it and she doesn't like any of my experiments, at first. It will take a couple of days to use this batch up and then I will try again. Instead of packaged soup tonight it will be good.

Maybe they make that lemongrass broth with the trimmings from lemongrass, and believe me, there are a lot of trimmings!

Keep trying, Barry - I'm sure you will come up with a close duplicate, and maybe something you like even more!

Thanks, Dave. It might take some time, but I think it is something doable. I think your right, I don't think all of the Lemon grass added to the flavor. With lager pieces it would have been easier to pick it out at the end. Boy those Thai recipes knock me out, the complex flavors like no other and so hard to replicate unless you are born into it I think, kinda like Gumbo, if you grew up in LA. it probably comes natural but to we mortals it is elusive.

I am still working on the Lemongrass soup, I have a pound of Lemongrass, should be able to figure it out eventually.

In the mean time, I ordered a case of the Lemongrass and Chili from Shaws, picked it up today, 72 packages for $82, shouldn't have to buy any for a while. One of the few things I enjoy eating now a days, so it seems worth it to me. I think ordering it from the website with shipping may be the same price or cheaper, when you consider gas and of course you have to have lunch.

I'll keep you posted on my soup progress, working with vegetable stock, it has a lighter flavor.
