 Post subject: I was gifted 4.5 lbs of cleaned pheasant breast - now what?

Frozen, very clean, no or little bone, skin, fat. It is from a large sporting/game farm over in Montana.

Can anyone point me in some good directions for cooking ideas? I think I would like to have a dinner party for six, to include my nice neighbor who just brought it over.

My Dad and brothers are Pheasant hunters and my Mom would always make a stroganoff. I haven't had it in years, but remember how rich and lush the sauce was. She served it with buttered noodles. Wish I had the recipe for you, but I'm guessing you could find one if you like the idea.

Braised in calvados, served with caramelized apples and onions.
With no fat, a sausage where you could use other fat would be nice-perhaps some dried blueberries and juniper in there too.
Poached and served with a red wine reduction.

Thanks for the ideas. I just looked up pheasant in JOC. Becky those ideas of yours are similar to Pheasant Smitane in that book.

Most of the recipes call for meat on the bone.

That was part of my plan, they have a word for it in JOC.

I'll surely report in on how it turns out, I have until early Jan to figure it out.
