I fell in love with farro in Chicago/NorthPond, and ordered some from Amazon. The first batch took the rest of my life to cook, and wasn't that good.

Has anyone tried p/c'ing it? And with what did you use as the liquid? I think vegetable broth might be an option.

Thoughts?

I don't have a p/c so can't speak about that and also had a few mishaps in the beginning, until I started to cook it like pasta i.e in a large pot of liquid at a rolling boil. That's been working beautifully, no more overcooked or mushy spelt.

And yes, I usually use broth (veg or chicken), sometimes infused with a small 12oz bottle of white wine depending on how much spelt I'm cooking. I try to experiment and it's usually good. I do have mishaps but those are usually due to the time of day and liquid influences ;)

Sometimes what is simply whole wheat berries is sold as farro, and this takes much longer to cook - about 45-60 min, compared to about 25 for farro. This is about how long it takes me every time - much longer, and it starts to break way open, and fall apart. After 25 min it is starting to break open - just a few of the berries - and al dente. If not, you aren't getting farro!

Dunno, Dave. I ordered it from Amazon, and it says, "farro." The bag came with some "busy recipes," but not for just plain cooked farro, which is what I was after.

KSS,

I've only had it for Farroto or in soup; I've never cooked it plain. And in farroto, of course, you have to stir and cook.

SUCCESS!!! :D I found a formula in Miss Vickie's PC book ( 1 cup farro to 3 cups liquid) and threw in some veg. broth, chicken broth, and as Nancy suggested, a little wine, and pc'd it for 18 minutes (recipe said 15, but it needed a little longer.) Turned out great!!!

I never got the Miss Vickie book, although I have several other p/c books, because I thought it sounded as though she was married to Tiny Tim.....
