I make a candy every year for Christmas. I have made this candy for years without any problem. This year, the last two batches weren’t cooked enough even though I cooked them to 135 degrees. I used my Thermapen so I know the temperature was correct. I’m wondering if I need to go to 140. I don’t ever recall going beyond 135 before.

I've always had better luck with an old-fashioned candy thermometer than a Thermopen when making candy or deep-frying.

The very tip of the Thermapen is where the sensor is, so if it is close to the bottom of the pot, it can give a reading that is too hot.

I guess I will try my candy thermometer the next time I make this candy which will probably be next year. Thanks for the help.
