So, if a crock pot is a "slow cooker", then a pressure cooker must be a "fast cooker", no? Anyway, I'm having fun with my new PC. It's electronic, which has its plusses and minuses, but I'm working with it. Aside from beans, which are why I got it in the first place, I've been pleasantly surprised by some other things -- particularly, risotto. For some reason, the PC makes better risotto than my prior "easy" risotto. It's not quite as creamy-aldente as doing "proper" risotto, but it's surprisingly close. Don't get how that works; somehow the pressure cooking brings out more starch. So, what do you make in your PC? |

A lot of the stuff I make has meat so it would not help you. Besides beans, risotto and stock, the other two non-meat things I make are German Potato Salad and Cuban Flan. My mom made Yucca in it as well, but I've never liked it, so I've never made it. |

Of course I never make them any other way. I've posted my recipe before, but if you don't have it, I'd be happy to post it again. It is typical Cuban, nothing fancy, no cilantro or hot peppers. |

I've found what I mostly make in my PCs is Red Beans and Rice and Hoppin' Jon. |

Artichokes are also good, unless you cook them too long like someone on this board has done. Mary |

I love making soups in mine. Stocks and meat based soups for sure, but also bean soups, sweet potato soups and the like. Stews I have not mastered yet (I still get better results from the Dutch oven for those). |

Paul, just watch your step next time (heh heh) Carey, do you have the Lorna Sass book? She has a very good beef stew with potatoes that works well for me. The potatoes cook on top of the meat and soak up the juice and then you smash them up with cheddar. I also like the veal and cauliflower stew she does. Maybe not as good as a cook all day, lots of prep stew but still pretty darn good. Mary Mary |
