I have a bread machine that I haven't used in years. I am thinking I might loan it to the Assisted Living for a couple of weeks to see if the boss might like to have one. I want to bake a loaf of bread at home just to make sure it works. I have some Instant Yeast that I bought from KAF in the freezer that has been vacuum sealed for at least 2 years. Do I dare use it or just buy new? How do you test instant yeast?

I tend to keep yeast for beyond the date in the freezer. It works. You can see if it foams in a bit of warm sugar water though.

I recently dragged our bread machine out of storage and have been making bread regularly with it. I adapted the whole wheat bread recipe from TLC Tim's Bread Making Tutorial and it works very well in the machine. As a bonus, I can get a 24 ounce loaf of that bread out of what is normally a one pound machine.

My yeast has a use-by date of March 2010. It was in the freezer from 2010 (2009?) until last year, and it's been living in the fridge since then. I used it this weekend and it works fine.

You know, I don't think I've ever had yeast in the fridge or freezer expire.

The yeast is fine and the bread machine made a beautiful loaf last night. I am going to take the machine to Susan this weekend and let her try it for a week or so. My machine is a Breadman machine that is over 10 years old. Any suggestions on a machine that she should buy if she does decide to bake bread for the residents. Preferably one that makes a longer loaf instead of a taller loaf.

I've had several different brands of bread machines over the years. The one I use now is the Zojirushi and it's fantastic. Versatile, in that you can and doughs or many different kinds of loaves. Very customizable. Highly recommended.

I bought my parents a Zojirushi (after a lot of research) and they have used it a couple of times weekly for years now and are extremely happy with it.
