I am not of fan of Insulated pans, but I'm wondering if this would work.

I double-pan things often, when I want to control how much the bottom bakes. I don't use the pennies, just stack two sheets.

Todd,

I agree with Becky -- you don't need the pennies if you're using heavy baking sheets like the one in the picture. Mind you, I don't know too many recipes that call for insulated baking sheets; the one we own is on the bottom of the stack and I can't remember the last time we used it.
