Two new ice cream books are out:

Sweet Cream and Sugar Cones from Bi-Rite Creamery in San Franciso

Molly Moon's Homemade Ice Cream from Molly Moon's in Seattle

Bi-Rite Creamery's ice cream are made with custard base with egg yolks.

Molly Moon's ice cream are made without custard, no eggs.

From my understanding, custard-based ice cream is French style and those made without eggs is American style.

Which type of ice cream do you prefer?

I bought both books and it would be interesting to compare. I would imagine the French style ice cream (Ben & Jerry's and Haagen Daz both have eggs) to be creamy and silky and the American style to be more flavorful without the eggs toning down the prominent flavor.

IIRC, the no-egg ice cream is known as Philadelphia-style. I can go either way; it depends on my mood. I tend to go with fewer eggs than the recipes call for even with the custard-style. Clickety

I can't see any downside to a side-by-side experiment (other than an enlarged backside)...
