 Post subject: Best way to freeze Chanterelles

My friend just gave me some chanterelles...he had a great haul this year! I have always used them up right away, but want to freeze some this time. I’ve sautéed them and was just about to vac-seal them but I’m wondering if that would smoosh them too much..maybe I should use zip-locks?

I didn’t! I’ve read that drying isn’t the best way to preserve Chanterelles, as it is with some mushrooms. I usually sauté with shallots in a little olive oil. Then my favorite dish is a mushroom risotto. I was just about to vac-seal them this time, but wondered if a zip lock would be better. In the end, I went with z-locks.

Something I do with the Foodsaver, when packing something that I don't want to crush too much, is put the amount I want in the packages, then freeze them almost completely, but not quite, then vacuum seal them. You'll probably use them fast enough, that the ziplocs will be fine!

You could try drying some of them in the future, if you have a dehydrator, and set it low - around 110°. Less of the flavor will be lost, at the lower temp. I like the idea of freezing better, however.
