I sometimes find a container of bacon fat hiding in the back of the fridge that is a few months old. I give it the sniff test and if it doesn't smell rancid or off I will use it. I don't know if the food safety police will be knocking at my door now, but I'm still alive, anyway.

I have kept bacon grease for several months and we're fine. Usually doesn't last that long, though.

Yeah, it's usually several months before I decide that I should eat the stuff at the bottom of the jar as well as the stuff at the top. It has always been just fine.

I keep mine in the freezer, and I've never had a problem with it going rancid.

Graham crackers, however, are another thing...

Thanks everyone. Next time I think I'll freeze it. I want to make cornbread in a cast iron pan for the first time (Yeah, well, I'm a Yankee). ;)
