This does not have to be dominated by the mushrooms, although it may. ;)

I had a half pound of large buttons and..............

Anyway, in addition, I seek your advice as to freezing the left over sofrito (there are only the two of us)???????????

My Googling of sofrito recipes took me around the world; interesting how each nationality says their's is the only way........... :roll:

So a mushroom base?

My suggestion would be to go NOLA and make a Creole base with mushrooms, then build a roux.

This gumbo basically does that: http://www.nola.com/food/index.ssf/2015 ... erbes.html

It uses smoked mushrooms, but it's still pretty good with regular mushrooms. You could just make the roux base and freeze it.
