First real snow of the year (other than the flurries last month). Freezing temps calls for soup. Last night I made a batch of Sausage, Potato and Kale Soup. I love how quick and easy it is to prepare. Just soup and a nice ciabbata roll. Yum. I think the recipe was posted here in another thread some time ago.

This is definitely soup weather, and a few days ago I made a delicious Thai soup that a friend sent me the link to. I had just harvested all of my lemongrass, due to the freeze that is coming soon, and I just had to make something with it! This lemongrass was still sending up shoots to the very end, so I used the smaller stalks for this soup. I used the butternut squash from my garden, in place of the pumpkin, and komatsuna in place of the spinach. I used firm insted of soft tofu, and I put in a 12 oz. container of coconut milk, as the amount called for seemed small. I used my nam prik pao for the heat, which gave it a fantastik flavor, though I'm sure some minced fresh chiles would be good, too. I used my immersion blender just briefly, to thicken it a little. And I tasted the cilantro and Thai basil garnishes separately and together, and the Thai basil was the best by itself, and they were also delicious together. http://thaifood.about.com/od/thaisnacks ... tosoup.htm

I chiffonade it, that is, roll the leaves up and slice thin. Somewhat tough to do with curly green kale, but I made it work.
I also had to alter the recipe to support a veggie version; this meant that I didn't cook the sausage in the soup at all, but fried it completely separately. To offset this, I added some smoked paprika and piment d'Espelette to the basic recipe.

Heh, dave, that sounds like one of those jokes where someone is "I made your recipe but changed everything and the outcome was awesome/awful/etc!"

It is, and it's also really easy.
And yeah, Dave should write out his recipe, since basically he did a completely different recipe than the one he linked to.
