I'm more than happy to post the recipe:

Red Beans & Rice (pressure cooker)

1 lb dried red kidney beans
4 cups water
2 each ham hock -- (1-1/2 to 2 lbs.)
8 each celery ribs -- finely chopped
2 medium onion -- peeled and finely chopped
2 each green bell pepper -- stemmed, cored and finely chopped
6 each bay leaves
2 tsp white pepper
2 tsp dried thyme
1 1/2 tsp garlic powder
1 dash cayenne
1/2 tsp black pepper
1 lb Andouille sausage

Rinse and sort beans. Place 8 cups water into the pressure cooker. Add the beans and bring to a boil. Lock the lid in place and bring to high pressure over high heat. Reduce heat to maintain pressure and cook 3 minutes. Release pressure according to directions (cold water or using the valve) and remove the lid. Drain beans and return them to the pressure cooker.

Add water, celery, onion, green bell pepper, bay leaves, white pepper, dried thyme, garlic powder, cayenne, black pepper and Tabasco sauce.

Allow ingredients to come to a boil, stirring often.

Add ham hock.

Close lid and bring to high pressure over high heat. Adjust heat to stabilize pressure. Cook for 10 minutes.

Remove from heat and use Natural Release Method.

Remove ham hock and let cool.

While ham hock is cooling, slice sausage into 1/4-inch pieces and brown in a skillet.

Remove ham from bone. (I skip this unless the bone is very meaty, because it's just too much trouble; there's enough meat with the sausage)

Add sausage and ham (if using) to the bean mixture.

Close lid and bring to high pressure over high heat. Adjust heat to stabilize pressure. Cook for 10 minutes.

Remove from heat and use Natural Release Method.

Discard bay leaves.

Serve over white rice.

Thanks Linda! I tried a Cooks Country slow cooker recipe for my first try, but this looks tastier.
