Yesterday I made a batch of figs in honey and waterbath canned them. I just realized I didn't add any acid to the recipe and now I am trying to decide if I should reprocess them.

I poached the figs for 5 mins in water and honey with a shot of bourbon and spices, removed the figs to the jars, and boiled down the syrup by 2/3. I put the warm figs in sterilized jars, filled half way with the hot syrup and topped off with warm honey and processed for 10 mins.

Any thoughts?

I decided it wasn't worth risking it and the jars are in the fridge and the syrup is back on the stove. I'll add acid this time. :/

I made 14 quarter pints (3 figs) and four half pints (five or six figs). The quarters got half a teaspoon of lemon juice and the halfs got a teaspoon.

I decided lids and labor were easier to replace than friends. I'd hate to kill someone with a present. Including myself. :P
