I am looking for a really good chocolate pie recipe. 2 of my kids have always loved French Silk Pie, but I want to make something without raw eggs now. Any suggestions?

CC has a recipe for French Silk Pie that heats the eggs to 160F. Someone has even put it on Food.com.

Nope, I should. I have a Pillsbury frozen piecrust that came from an aunt who had to clean out her freezer before she moved. I need a filling so delicious, no one will notice the crust.

I've tried it. The vote here was to go back to my old recipe. It wasn't bad, it just wasn't as good as the original.

My old recipe was from Maida Heatter's Book of Great Chocolate Desserts.

Thanks, everyone! SilverSage, which recipe is that? I don't have that book but found a few different chocolate pies from Maida Heatter when I did a search.

She has a French Silk Pie recipe in the Chocolate Dessert book that is great, but it's traditional with the uncooked eggs. I have it in my Living Cookbook, but don't exactly know how to get it out of there to post here.

Maybe Alina could help me with that and I'll post it.

Just click on the recipe, so it appears on the right, then go to edit and select copy. Then come back here and when the reply box opens right click on the box and select paste.

Thanks! I thought you had to use that export feature, and couldn't get it to work out.


French Silk Pie

Ingredients
3 oz unsweetened chocolate
6 oz butter
1 tsp vanilla
1 cup light brown sugar, firmly packed
4 eggs
1 Graham Cracker Crust
Stabilized Whipped Cream
6 oz milk chocolate curls

Procedure
1. Melt unsweetened chocolate. Set aside to cool.

2. Cream butter, sugar, and vanilla until fluffy.

3. Add melted chocolate and mix well.

4. Add the eggs, one at a time, beating a full 5 minutes after each egg.

5. Pour into Graham Cracker Crust. Chill several hours or overnight.

6. Spread stabilized whipped cream on top.

7. Garnish with milk chocolate curls.
