We had these at the Garlic Festival last weekend and they were to-die-for-delicious so I found the recipe online and made them today. I found the recipe to be quite flawed as written - too mushy to form into meatballs, and needed to add about 2 cups more breadcrumbs after chilling the mixture. Could be today's weather affected the mixture because it's been raining all day. They were still mighty tasty! I also baked instead of braised.

Sounds interesting, but I think I would roast or grill the EP, and scrape out the meat, rather than boiling it. The boiling probably is what makes it mushy, as it gets more water in it. And I would probably use your method of baking. And, of course, I'm sure I would add more garlic. ;) Only 2 cloves for 4 lbs of EP????

Also, using the Asian EP (all I ever have from my garden...just picked 5 more today!) may make it less wet.

Completely agree with all your suggestions Dave and those were my knee-jerk ideas for the next batch. I've never heard of boiling EP and thought it was really odd...but wanted to stick to the original to see how it worked for the home cook.

Nancy,

I have some other recipes which call for steaming or simmering eggplant; I always substitute baking or microwaving instead. Aubergines have a LOT of water in them, and adding more is pretty much never a good idea.
