Thanks Darcie. DD made waffles from this recipe this morning and they were very good. For the first batch in the Belgian pan, she put in too much batter, so they were very substantial. She used less for the 2nd batch and the ones made in a regular waffle maker. These were even better. Have no idea how they would keep as all were gone within minutes. My almost 2 granddaughter who loves waffles (plain, no butter, no syrup) loved them and was upset that daddy had eaten the last quarter. So thank you again. We used the buttermilk powder with 2% milk variation and did not separate the eggs (which were extra large since that is all we had).

Wino, you might have to ask for malted milk powder. I've found it with breakfast cereal, dried milk, baking items, protein drinks, and mixed drink ingredients. Nobody seems too sure where it belongs anymore.

Just a note to say that if you forget the baking soda the pancakes are not quite the same. Thankfully I figured that out after the first batch went on the griddle so all is not lost. I also made up 3 double batch bags of the dry ingredients for the freezer. Helpful to have for weekend mornings.

Any problems doubling this? We actually all agree on these as our favorite pancakes, but one batch isn't enough for my family anymore. 😍

I've doubled it, made it with white whole wheat flour instead of cake flour, and substituted thinned yogurt for the buttermilk. It is the recipe that cannot be destroyed.
