I was looking into these this Christmas, and found it odd that the 23 qt model is cheaper than the 16 qt. They didn't give the capacity for the 23 qt in Amazon, but on two other sites they stated a double capacity of the 16 qt for pint and half pint jars, but the same for the qt jars - 7. Make any sense?

Now that I've come to my senses and agree that I absolutely MUST have a pressure canner , I've got the 23 quart Presto model in my Amazon cart. But I wanted to first ask one quick question of you seasoned "preservers": with a model that large, are there any issues with canning very small batches? I want to make/can some onion jam for a few winter birthday gifts, but it will probably only total 4 to 6 half-pints. Since I've only done water bath before, I wasn't sure if there were any considerations as far as empty space inside the pressure canner. As always, I'd appreciate any insight! Emilie

I have this one Presto 01781 23-Quart Pressure Canner and Cooker. I've not canned anything, but it is great for stock. I've used using my 12 qt. pasta pot to dump it in for straining. It has saved me so much hassle. Pressure canning is in my list of things I want to learn to do. I've got the Bell Book so maybe after I finish my house decluttering I'll try it.

I'm so glad you mentioned that, Alina! I already have a 12 qt. stockpot -- so it would be crazy for me not to get the 23 qt. to have a much larger size pot, for making stock if nothing else, in addition to the pressure canning. (I made some chicken noodle soup just yesterday with homemade stock and it was sooooo good (KAF recipe that was just on their blog) that I'm doubly determined not to use boxed stock unless absolutely necessary!

I have a huge rosemary bush, so I am going to try it. It says it can stay in the fridge for 2 months, and only makes 3 jars. I wonder how it would freeze? Emilie, let me know how it works with the pressure canner. Seems that 3 jars would leave lots of room for other stuff. I wonder if you can do the bacon jam the same way?
